Turkey Ghee Roast

Prep Time: 10 hrs
Cook Time: 60 mins
  1. Wash turkey breast and put it aside in a bowl that will fit into your fridge.
  2. Heat a pan on the stove with a tsp of ghee.
  3. Add whole coriander seeds, fennel, and cumin. Roast spices, stirring constantly, until fragrant. This will take 5 minutes.
  4. Add in the rest of the whole spices and roast for another min. Keep the mixture moving to prevent burning.
  5. Let cool.
For the Spicy Marinade Paste:
  1. Add all the ingredients for the marinade except the ghee into a blender (or a small food processor), including roasted spices, tamarind paste, turmeric, sugar, 1/2 tsp salt etc. Grind to a paste.
For the Turkey:
  1. Heat ghee for a few seconds in the microwave. Mix with the marinade paste and onions.
  2. Coat the turkey breast generously with this paste. Cover and refrigerate overnight.
  3. The following day, place chunks of potatoes on the bottom of the dish. These will cook under the turkey breast and can be served separately or together. Place turkey breast on top.
  4. Place dish in the oven for 35 mins at 350 deg F. Flip the turkey breast at 20 mins.
  5. Use the thermometer to check if it's cooked.
  6. Turn the grill to hot and broil for 10 min to get the colour on top.
  7. Serve hot with salad, rice or bread.
